When my fellow bento bloggers decided to do a Fourth of July/ Patriotic Hop, the first thing I thought of was Martina McBride. You know the song... "IndependenceDay" (yeah, I went there - can you believe that song is almost 10 years old!? EEK! I love it still. Always will. The video too.)
Anyways, even though the song has a different meaning behind it, I love when she belts out "Let Freedom Ring!" and so that lead me to this lunch creation: The Liberty Bell.
First of all, I have to thank my friend Astrid of Lunches Fit for a Kid for putting the folks at King Arthur Flour and I in contact with one another. (I'm mad jealous of Astrid's voodoo baking skills, so please go check them out and be jealous along with me! lol)
I love King Arthur Flour ~ Once I learned the difference between KAF and "other brands", it became the only flour I started using. They're the oldest flour company in business, dating back to 1790!
After Little Miss started her GF diet, imagine my excitement to discover the Gluten Free line of flours and mixes! What you might not know is they're not only certified gluten free, but allergen free. That's right - they are made in a dedicated facility FREE of the Top 8 Allergens!

Little Miss had a set back this weekend after I let her eat gluten on Friday :(
She got sick almost immediately and I have been feeling awful about it since... now we know though, we can't slide even a little. *sigh* Trying to keep the lesson into perspective and not beat myself up about it. She was in much better spirits today and ate a bit more. Her tummy is still not 100% though.

Summer is here!! Today was Little Miss' official first day of summer. We met a friend downtown for lunch where we ate outside at one of the covered tables lining the street. So I packed up a lunch for Little Miss, but with a fun summertime/ camping theme! Why? You'll see... keep reading!
Thursday is the last day of school for Little Miss *sniff sniff* ~ It's a half day.
My baby will no longer be a first grader! Bahhh, how did this happen!?!?! ;)
I still have to pack her a snack for the AM like I do every day. The fella is taking her out for a special "daddy/ daughter lunch" after school as a surprise since he'll be the one picking her up. So sweet! All his idea too.
Tomorrow is the last full day of school for Little Miss! *sniff sniff*
She decided for her last lunch at school as a first grader, she wanted to make it herself. How could I refuse such a sweet request!? So she made lunch while I cleaned up dinner.
Little Miss, and the entire first grade, is going on a field trip tomorrow to the Nature Center and this Mama gets to chaperone. :)
I'm actually excited about it since I haven't done a field trip with her since pre-school... AND it's her first FULL day field trip -- the initial reason why I volunteered... PB&J's are a staple on field trips and even though her class is nut-free, the other first grade classes aren't. However, her teacher reassured me by welcoming me to join and that the kids would be eating lunch with their own class.
I volunteered to be the designated medication holder - epipens, inhalers, benadryl, first aid! I'll also come armed with wipeys and germ-juice! LOL ;)
SO anyways!! That means she and I BOTH needed a picnic, disposable lunch.
